Château d'Aussières Rosé

Because of Aussière’s cool microclimate, the Grenache and Syrah that go into this rosé mature slowly and develop a wide palette of delicate flavors. Only certain plots of stony and sandy soils are considered for this wine, then only the best 50% makes the cut. 20% ferments in new oak barrels for added complexity (the rest in stainless steel), and four months on the lees with regular bâtonnage makes for a generous rosé with notes of blood orange and raspberry, decadent now but with the structure to age for five years or longer.
Vineyard
The estate is nestled in the rugged hills just behind the Mediterranean coastline of Narbonne, in the South of France. Specific plots have been selected for this wine, conducted with an organic farming approach. During the entire vegetative season, the vines have been tended with the idea to produce a rosé that would render the complexity and finesse of its terroir.
Tasting Note
The white fruit nose opens with notes of strawberry and a hint of menthol. On the palate, there is an attack of grapefruit, a fat and ample mid-palate with notes of almond pastry and a hint of liquorice.
Vintage
The spring of 2023 saw a hot April and very low rainfall. At the beginning of August, the vineyard was at mid-veraison. The harvest went on smoothly.
