Givry is one of the smallest but most famous of the 5 villages in the heart of the Côte Chalonnaise, in the southern part of Burgundy. Whole bunch maceration really helps this wine to deliver. It brings structure, matter and a touch of spiciness and freshness.

VINEYARD

Chanson works with 2 growers that farm 5 acres to produce an outstanding red that has uncommon
flesh and finesse. As with all their grower relationships, Chanson harvests all fruit with their team in order to maximize control over fruit quality and picking times.

WINEMAKING

The wine is for the most part left alone, as the philosophy is one of “infusion rather than construction.” The wine is vinified 100% whole cluster to extract a deeper color and enhance the structure and aromatic complexity. The major condition is that the grapes must be perfect in terms of ripeness and condition. The reds have a perceptible style as a result: beautiful aromatics with complex spice complementing fruit on the nose and palate. Chanson also strives to maximize the preservation of fresh fruit characteristics, which is why grapes are chilled immediately on arrival in a proprietary tunnel that provides a very quick chill with no oxygen exposure. Reds then get a long cold soak and maceration. Then, Champagne-style fractional pressing is practiced to gently extract the purest juice. Malolactic fermentation takes place in barrel on the fine lees with no batonnage. Oak is used conservatively, with no more than 30% for the reds. Aging took place in oak casks for 14 months.

VINTAGE

After a rainy winter, a heat wave in April followed by a cold period in May, the weather settled down in Burgundy with warm temperatures in June. Summer was warm and dry. It was punctuated by several heat waves which engendered a lack of water, compensated by the presence of clay in many plots.The harvest started in the last days of August with an excellent maturity of the grapes. The red wines are crunchy, deep and dense with an outstanding aromatic complexity.

TASTING NOTE

Deep ruby colour with purple nuances. Fragrances of violet mixed with refreshing notes of ripe red berries (cherry) on a hint of liquorice. Well-balanced and complex. Very pure fruit combination. Tight texture and well-crafted tannins. Persistent and refreshing aftertaste. Pair with cooked pork meats, pâté, pie, grilled or roasted meat, fowles and “fromages à pâte pressée”.

The high proportion of clay gives to the wine a specific minerality which underlines the typicality of the Chardonnay. Gevrey Chambertin is the most famous appellation of the "Côte de Nuits" and the climat "La Perrière" is located in the heart of the Premier Cru area. The grapes are sourced from a partner winegrower but are picked by members of the Chanson team.

Chassagne-Montrachet 1er Cru Les Chenevottes Domaine

Chanson’s 2 hectare plot is located next door to the famous terroir “Le Montrachet.” The soil most consists of clay and limestone with the famous stone of Chassagne and is clearly mineral. The vineyards have a peculiar aspect; they are made up of small blocks entangled into each other. With its east exposure, on the road to Saint Aubin, this plot benefits from the fresh air which gives the wine very pure and refreshing aromas.

Pernand-Vergelesses 1er Cru Les Vergelesses Domaine

Chanson owns a vineyard of 5.4 hectares in Premier Cru “Les Vergelesses.” The plot is located in a hollow at the bottom of the hill of Corton and its clay and limestone sol combination gives wines a very specific structure.
