In the current issue of Wine Spectator, Chef Haidar Karoum of Washington D.C.’s Chloe shares his love of gnudi and the ideal wine pairing for his interpretation of the dish. Like many of the menu items at his restaurant, the flavor profile of his gnudi offers a nod to his father’s Lebanese heritage. For the pairing, he suggests “a ripe, fruity white with fine cut will stand up to the starchy, smooth ricotta dumplings and the burst of acidity from the tomato confit.” The editors of Wine Spectator recommend the Guigal Cotes du Rhone Blanc 2017 as a great match.
